Awaken your senses with the wild flavors of the season as you forage for edible plants, flowers, and botanicals alongside Monique, the “Wildplukkende Bourgondier.” Together, we’ll create a delicious, seasonal lunch that celebrates the bounty of the polder and delights your palate.

Through intention-setting and garden therapy, you’ll reconnect with the rhythms of nature and plant your own seeds of renewal—both literally and metaphorically—for the months ahead. This retreat is your invitation to slow down, savor the moment, and step into spring with mindful clarity, creativity, and joy.

Program

09:45 – Arrival & Settling In
Upon arrival, you’ll be welcomed into the tranquil atmosphere of Little Dutch Farm. Take a moment to settle into the peaceful surroundings, letting go of stress and opening yourself up to the day ahead.

10:00 – Tea Ceremony & Introduction
We begin with a tea ceremony from the farm, setting the tone for the day as we explore the theme of spring.

10:45 – 11:45 – Spring intentions from the heart
Nature coaching exercise to connect to your intentions this spring

11:00 – 14:00 – Foraging & Wild cooking
Join Monique, the “Wildplukkende Bourgondier,” as she takes you on a foraging adventure through the farm. Discover edible flowers, botanicals, and seasonal wild ingredients. Learn to create a delicious, nourishing, and visually stunning lunch from what you find. Share a mindful meal together, connecting with others and with the rhythms of nature.

14:00 – 14:30 – Mindful Nature Walk
Reconnect with the natural cycles of growth and renewal. Spring intention work continued with nature coaching exercises.
Mindful walking, breathing, and sensory exercises to ground yourself in the present moment.

14:30 – 15:30 – Garden therapy & planting seeds of intention
Engage with the soil, plants, and trees through garden therapy practices Literally plant your seeds of intention

15:30 – 16:00 – Spring Celebration Closing
Closing circle to reflect, share, and welcome the season with gratitude.

Location

At our beautiful, rural farmhouse from 1901, sustainably renovated with respect for nature, you will find peace and space. The farm features a small meadow with four horses, an orchard full of fruit trees, a flourishing vegetable garden, and a pond filled with water lilies, ducks, and frogs, accompanied by a cheerful choir of birds.

Miss & Tommie, our farm cats, and our Bernese Mountain Dog, Balou, warmly welcome you to Little Dutch Farm, where nature and simplicity come together.

By integrating garden therapy and nature coaching, she provides a supportive environment for personal and professional growth. Kim’s work helps people realign their strengths, clarify their vision, and embrace nature’s transformative potential for enhanced well-being.

Monique Könings
Culinary Forager

Monique grew up in South Limburg, surrounded by good food and a deep appreciation for nature. Her love for edible plants began in her grandmother’s garden, picking berries and cherries for homemade pies and pancakes.
While working on a care farm, her curiosity about medicinal plants grew, leading her to study herbal medicine, aromatherapy, and nature coaching. She later turned her passion into her profession, working as a gardener and wild forager for top restaurants and training in tea & food pairing, botanicals, and cheese profiling. Her experience includes Parc Broekhuizen and an internship with master herbalist Wim Maes, supplying herbs and edible flowers to several Michelin-starred kitchens.
In 2021, Monique founded Natuuropleiding to make nature education more inspiring and accessible. Today, she combines her plant knowledge, foraging expertise, and love for good food to help people reconnect with the richness of nature.

Additional information

Retreats will go ahead in all weather conditions except for weather warnings yellow, orange or red. Then the retreat will be cancelled and you will be refunded.

The event is fully outdoors so please dress appropriately.
